Recipe: Perfect Vanilla Cupcakes


Perfect Vanilla Cupcakes
Recipe by Glorious Treats 
Yields- 15-16 cupcakes

1 1/4 cups cake flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

2 eggs
3/4 cup sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup oil (vegetable, canola or extra light olive oil)
1/2 cup buttermilk
(or 1/2 cup milk plus 1/2 teaspoon white vinegar or lemon juice- add acid to the milk then set aside for 5 minutes before using)

Directions-
* Preheat oven to 350*F.
* In a medium bowl, add cake flour, baking powder, baking soda and salt.  Stir together with whisk, and set aside.
* In the bowl of an electric mixer, add eggs and beat 10-20 seconds.  Add sugar and continue to beat on medium speed about 30 seconds.  Add vanilla and oil, beat.
* Reduce mixer speed to low and slowly add about half of the flour mixture.  Add half of the milk, then the rest of the flour and the rest of the milk.  Beat until just combined.  Scrap down the side of the bowl.  
* The batter will be thin.   Pour batter into a muffin pan prepared with paper liners.  Fill liners about 2/3 full. 
* Bake cupcakes in pre-heated oven for 12-14 minutes. 
* Cool in pan 1-2 minutes, then remove cupcakes from pan (carefully) and finish cooling on a wire rack.
* Frost as desired when fully cool.  I love to use my favorite Vanilla Cream Cheese Frosting recipe.   

* Feel free to use this recipe for a cake as well.  The recipe above will work for a 6" cake.  Double the recipe for an 8" or 9" cake.
* A note about Cake Flour-  Cake Flour has a lower protein content than traditional all-purpose flour, which results in a more tender, delicate crumb in the finished product.  If you can not find or access cake flour, feel free to substitute as necessary, but your results will vary from the original recipe.

Puto Recipe

I know this would be the first time I will post a recipe, :) But I just wanna share a recipe from one of my good friends, Martha. Here it goes.

Ingredients:
1 banana (ung green or lakatan na over ripe, don't choose ung ripe lng, di sya ganun katamis, the more over ripe, the better!) 

1 egg 
1 tsp. oil 
2 tbsp. water 
2/3 c. all purpose flour
 2 tsp. baking powder 
1/4 c. sugar (u may add 2 tbsp depende sa pagkahinog ng saging) banana essence 


steam for 12-13 minutes : small size ng puto mold / 15 minutes : medium size ng puto mold yield:35 pcs pag small size / 28 pcs pag medium size 


Procedure: Mix dry ingredients and wet ingredients in two separate bowls. Then combine. Do not over mix. multiply mo nlng ung ingr. kung ilang pcs ang gusto mo gawin.

5 Steps of Success


I like these 5 points mentioned in a Filipino movie, entitled "My Big Love". Though these have been  used as steps to lose weight, but for me it's more than that and it goes like these:

1. Goal setting. Know the big why. why you're doing things.
2. Start today. Sige ka, tomorrow might be too late.
3. No shortcut.Go straight to your goal, things are earned before you can have them. Make it slowly but surely.
4. Motivate yourself. Find your inspiration. Someone that will keep you motivated, someone that will push you to strive more.
5. Be happy. Most important thing is, SMILE; there's a lot of reasons to be happy.

Actually, as I am watching the movie I am really looking for a pen and I want to write it down. But to no avail. So I just memorize but almost forgot the 2nd one. Maybe it's the most thing I've always taken for granted, "start today". I tend to put things for tomorrow even if I can do it today. For that I need to change. I need to start. I need to move.

Our Life Is Not Our Own

Today, I've lost one of my closest friends at church. She went to the Lord this morning at about 12nn.

I still can recall the moments where we have been together at church. Whenever they will be coming from Ilocos and will be staying at the church for a couple of weeks, I will come to the church even on weekdays to eat breakfast with them. From then on till about noon time she will keep on telling me her life stories over and over again. Yes, she has been so jolly. I always laugh whenever she says, "Ay apo. (in Ilocano)". The way she speaks is more than enough reason to make me smile and laugh at the top of my voice. I have no question about her faith. She have served the Lord well. I know and believe she is so very happy today. She is already at her Savior's loving arms. I love you, Sis. Zeny. Surely I will miss you, but I'm gonna see you in heaven soon.

Just as with my morning devotion today that speaks about death. The verse can be found on 2 Corinthians 5:1-8. Our life is not our own, it is God's. Being a believer of Christ, death to us is just the shadow of our path to heaven. Actually, our life on earth is not short, it is just enough. Enough to recognize and accept Jesus as our Lord and Savior and live a life that pleases Him. As the Book of Ecclessiastes 12:1 says, "Remember your Creator in the days of your youth, before the days of trouble come and the years approach when you will say, 'I find no pleasure in them'--"


Enjoy life with Jesus and again I say, "Live your life with Jesus".

On a One Sunday that I Cried



Yes, I cried at the church during the Worship Service and this song have really touched my heart.

I've found myself in tears shedding on my face.
I know people might have noticed me, even my husband who was standing besides me, but I don't mind them. I just continue contemplating on the message of the song, and this ended me up searching on the song's lyrics on the internet. I'm glad I've found one.
